Preheat oven to 180°C/350°F. Line (or grease and dust with cocoa) a 12 muffin tin with paper cases or silicone liners.
In a large bowl, add the sweetener, butter and the vanilla. Beat until pale and fluffy.
Beat in the eggs, one at a time - beating well after each addition. The mixture may split a little, but it will come back together when you add the other ingredients.
Add the mixed spice (**see notes), cinnamon, and orange rind. Mix through.
In a separate bowl, combine the coconut flour, baking powder, and cocoa powder and salt.
Add the dry ingredients to the batter in small batches, mixing after each addition.
Beat in the almond milk. If that batter is still very thick, beat in more almond milk 1 tbsp at a time until it thins out a bit. The batter will be scoopable consistency - not pourable.
Divide the mixture evenly among the paper cases. Bake for 20 to 25 minutes or until a skewer inserted in the centre comes out clean. Cool in pan for 5-10 minutes and then transfer to a wire rack and set aside to cool.
